Delicious Shakarpara
Wishing you all a very happy Diwali! Shakarpara or Shankarpali is a popular Indian recipe that often finds in Diwali sweet platter. It is prepared all over the country and goes by different names based on the region. These sweet biscuits are known as Shankarpali in Maharashtra, Shakarpara in Gujarat, sweet tukdi in North India, Kalakala in Tamil Nadu and teepi maida in Andhra. Shankarpali are so addictive that you will just keep munching on them like there is no tomorrow. Lets learn how to make delicious shankarpali in somewhat maharashtrian style.

Ingredients :-
- 1 & 1/2 cup Milk
- 1 cup Sugar
- 1 cup Ghee
- 1/2 kg All purpose flour (Maida)
- 1/2 cup Semolina (Rava)
- salt
Instruction :-
- Add milk in a vessel and heat in low flame for few minutes. Now add sugar into milk and stir it continuously till the sugar melt. Let the milk cool down completely.
- In another plate, take ghee and start mixing it with soft hand till its mixture become smooth.
- Now add Maida followed by Rava to ghee. Rava is added to bring some crunchiness in Shankarpali. In this way shankarpali become somewhat crispy. Proportion of Maida is not exact, you may or may not need to add some extra flour.
- Start adding the mixture of milk and sugar to flour mixture and start kneading the dough to make it very soft but little bit stiff. Now cover and keep the dough for 30 minutes approx.
- Make 2-3 balls and work on one dough ball at a time. Roll the dough ball like thick paratha with 1/2 inch thickness. Use a little flour while rolling or roll on wax paper to avoid sticking. Cut the rolled-out dough into desired shapes (traditionally they are cut into diamond shapes).
- Heat oil to medium heat and when the oil is hot enough, deep fry these cut pieces in small batches till they are golden brown from both sides. Drain and remove them on an absorbent paper to drain off excess oil. Let them completely cool off before storing it in air tight container.
